Frugal Friday!

Today I'm going to share one of my very favorite recipes! Bruschetta makes its way to our table at least once a week and sometimes more in the summer when tomatoes are plentiful and inexpensive. If you grow your own, it costs even less! This is a fabulous dish and has the added bonus of being extremely healthy! It would be a great dish to bring for a brunch or to have that little extra pizzazz at a special lunch. It looks and tastes very fancy! But, it's so quick, easy and inexpensive you can serve it anytime... and we do!
Bruschetta

8 Tomatoes (chopped)
5 Fresh Basil Leaves (chopped)
2 Garlic Cloves (minced)
1 pinch Dried Oregano
Dash of crushed Red Pepper
Dash of Celtic Sea Salt
1 tablespoon Extra Virgin Olive Oil
1 loaf Whole-Grain French or Italian style bread

In a mixing bowl, combine all the ingredients except for the bread. You can use more olive oil if necessary to coat the entire mixture. Allow the mixture to sit for 10 minutes. Slice the bread and on a baking sheet, arrange the slices. Brown both sides of the bread slightly under the broiler and remove. Spread the tomato mixture over the toasted slices. Eat immediately and ENJOY!"

Yummy! I hope to have lots of tomatoes this year, so I can have delicious recipes like this whenever I want. :)

This looks awesome! I will have to try it. Last summer, at a potluck-style picnic, I had some bruschetta that was made with tomatoes and zucchini. It was sooo good!

Yum, that sounds delicous. I get this when we go to Olive Garden, and I've been meaning to make it at home.
